Offal are the edible parts of an animal besides the flesh. It includes internal organs (liver, stomach), tail, feet and entrails. It is highly nutritious and relatively economical source of B vitamins, iron and zinc. However, people with cholesterol issues should avoid organ meats, as these are high in cholesterol.    
 
Liver
Liver is an excellent source of vitamin A (needed for healthy skin and infection resistance) and vitamin B12 (needed for red blood cell formation and a healthy nervous system). Liver is also rich in iron and zinc and is thus a valuable food for people suffering from iron-deficiency anaemia. It is also a source of niacin, riboflavin and folate.

Liver consumption should be limited to once a week due to its high cholesterol content. Women trying to conceive or in the early stages of pregnancy should avoid liver. High consumption of vitamin A has been associated with birth defects.  

Brains
This soft meat, usually from lamb, is a good source of vitamin B12 and niacin.

Heart

Heart is a fine source of protein, riboflavin, vitamin B12 iron and zinc.

Kidneys
Kidneys are a great source of riboflavin and vitamin B12, iron, niacin, thiamine, zinc and folate.

Tongue
Ox and lamb tongue are rich in sodium. Stewed sheep’s tongue is a good source of vitamin B12

Hadith

 كَانَ رَسُولُ اللَّهِ صلى الله عليه وسلم إِذَا كَانَ يَوْمُ الْفِطْرِ لَمْ يَخْرُجْ حَتَّى يَأْكُلَ شَيْئًا، وَإِذَا كَانَ الأَضْحَى لَمْ يَأْكُلْ شَيْئًا حَتَّى يَرْجِعَ، وَكَانَ إِذَا رَجَعَ أَكَلَ مِنْ كَبِدِ أُضْحِيَّتِهِ
Allah’s Messenger (sallallahu alyhi wa sallam) would not leave on the Eidul Fitr [salaah] unto he had eaten something, whereas he would not eat on Eidul Adha until he returned [from prayers]. When he returned he would eat from the liver of the sacrificed animal. [Bayhaqi]

أَمَّا أَوَّلُ طَعَامٍ يَأْكُلُهُ أَهْلُ الْجَنَّةِ فَزِيَادَةُ كَبِدِ الْحُوتِ
“The first food which the people of Paradise will eat will be a portion of the liver of fish” [Bukhari]
